Abstrak

Ushbu maqolada mikotoksinlarning oziq-ovqat mahsulotlarida shakllanishi, ularning aholi salomatligiga salbiy ta’siri hamda ushbu jarayonning gigiyenik jihatlari kompleks tarzda tahlil qilinadi. Mikotoksinlar mog‘or zamburug‘larining toksik metabolitlari sifatida oziq-ovqat xavfsizligiga jiddiy tahdid soluvchi omillardan biri hisoblanadi. Ularning oziq-ovqat zanjiriga tushishi va inson organizmiga kirishi natijasida jigar, buyrak, immun tizimi, nerv tizimi va modda almashinuv jarayonlarida turli funksional hamda morfologik o‘zgarishlar yuzaga kelishi mumkin. Shu bilan birga, mikotoksinlar bilan ifloslanishga olib keluvchi asosiy gigiyenik xavf omillari, xususan namlik, saqlash sharoitlarining buzilishi, sanitariya talablariga rioya qilinmasligi va nazorat tizimining yetarli emasligi ilmiy adabiyotlar asosida yoritiladi. Shuningdek, mikotoksik xavfni kamaytirishda gigiyenik monitoring, profilaktik nazorat va oziq-ovqat xavfsizligini boshqarishning ahamiyati asoslab berilgan. Maqola davomida mikotoksinlar muammosining nafaqat toksikologik, balki gigiyenik va jamoat salomatligi nuqtayi nazaridan ham dolzarb ekanligini ko‘rsatadi
