Abstrak

Ushbu maqolada limon mevasini saqlash jarayonida yuzaga keladigan asosiy muammolar tahlil qilingan. Xususan, harorat va nisbiy namlikning meva sifatini saqlab qolishdagi ahamiyati, mikrobiologik zararlanish, fizik va kimyoviy o‘zgarishlar hamda saqlash davomiyligiga ta’sir etuvchi omillar ko‘rib chiqilgan. Shuningdek, mavjud muammolarni kamaytirish uchun amalga oshirilayotgan zamonaviy yondashuvlar va samarali usullar tavsiya etilgan.
