Abstract
Uzumni birlamchi qayta ishlash va yarim tayyor va tayyor mahsulotlarni biologik barqarorlashtirish uni ishlatishning barcha sohalari uchun umumiy texnologik jarayonlardir. Bu dastalarni yuvish, destemming va maydalash, issiqlik yoki fermentativ ishlov berishdan iborat.
